And then, out of nowhere, you get dealt a side swipe of a doozy that makes your head spin and you think, "Hmmm, maybe I am not quite as invincible as I thought I was"<br />

I am not talking about just cross contamination, which is a very real and constant thing.that can result in end game, but there are a slew of other challenges to face. If there weren't, we wouldn't spend so much time on blogs and forums/groups discussing them. If they weren't there, we wouldn't own our food allergies like a badge that irritates those who don't have them. It is just a fact of a food challenged life. </div>

Here are some of our top unavoidable traveling challenges:</div>

1. Rented a cabin with full kitchen and arrived after a snow storm, only to find the pots and pans were all non-stick surfaced, except for the baking sheet. Needless to say our menu options were a challenge, but aluminum foil is our friend.</div>
<div>
2. Rented an Air BnB house, arrived and found that the stove was broken. It was in a remote location with no cellphone service to call owner, so I drove down to a spot I could get signal. When I finally reached the owner, he suggested we take our food to a local pizza restaurant because no service could be rendered on weekend?!? Uhhh, not acceptable. So we left and drove to a city and got a hotel.</div>

3. Caught in a freak snow storm while driving and it took 4 hours to get to a restaurant to safely stop to eat. Now we <b><u>never</u></b> get in the car without something packed</div>
<div>
4. Airports with not one safe thing to eat except for a <a href="https://www.kindsnacks.com/" target="_blank">KIND</a> bar. Thank goodness for KIND, but our nut allergy friends? Nada. Refer to #3 and pack your carry-on bag with a few things.</div>
<div>
5. Emergency pit stops may necessitate you have toilet paper or tissues on hand, in the car, anywhere you can grab it. This will be extremely helpful before hanging off the side of a hill, hiding from cars, while having a coming to Jesus moment because there are no bathrooms in sight...Trust me.</div>
<div>
6. Got food poisoning and thought it was cross contamination. Drove 80 MPH to get to health store before they closed to get supplies to help the reaction. Realized it was actually food poisoning because the drive took 6 hours instead of 4. Both my face and bottom know every bathroom between Louisville and St Louis now.<br />

We made a trip to Raleigh NC in preparation of the next <a href="https://raleighglutenfreeexpo.blogspot.com/" target="_blank">Gluten & Allergen Free Wellness Event on August 12 at NC State Fairgrounds - Kerr Scott Bldg from 10 am - 4 pm</a>. The Raleigh event has become one of our favorites of the year because Raleigh is an amazing city if you have to be gluten-free or allergy-free. They have so many options that they continuously remain on the top lists of towns to be in and eat out while accomodating multiple allergens. Many of the best of options available in Raleigh will be at our event, so we hope you will join us.<br />

This will be the 6th year we have held the event in Raleigh and all of your favorite speakers and a couple new ones will round out a day of incredible info. The Gluten & Grain Free Gourmet supports delicious eating that is gluten, grain, soy, and poultry free. Jen Cuevas experienced her own journey to wellness by eating this way, and desires to share the message that life can still be delicious!
Just a few short years ago, Jen was ill with a multitude of issues (although not typical “Celiac” symptoms), including high cholesterol, pre-diabetes, sudden weight gain [over 60 pounds], Hashimoto’s, and arthritis (read more of her story here). After more than seven frustrating visits with various doctors, she finally learned about her gluten sensitivity and Celiac disease. In becoming well, she found that life without gluten was really great from a health perspective, but affected everything else that had a social factor.
In the time since her diagnosis, Jen has spent a lot of time learning. She was treated by Dr. Glen Aukerman (author: Better Health in 120 days) and attended all of his classes to understand the medical aspect of how various foods affect gluten sensitivity. After further health issues inspired her to do more research, Jen went completely grain and soy free in 2012, and became a certified coach under the direction of Gluten Free Society. She uses her own health journey to coach and inspire others to consider dietary changes as a way to achieve optimum health. In 2013 she established a support group, and found that food availability continued to be the biggest barrier to success. She began developing food products that support a grain-free, soy-free and even dairy-free lifestyle; many items are allergy-friendly and are free of refined sugars. She also offers allergen-free Communion to churches, raising awareness about the effects of gluten exposure.<br />

Pam Jordan was diagnosed with Celiac Disease in January 2011 after struggling for fifteen years with symptoms. She is a working wife and mom to three young kids. With two of the three kids living Gluten Free, she shares the tips and tricks to survive school, parties, and holidays with Gluten Free kids. Hitting all top 8 allergens narrows the risk of a child being able to eat safely but does not account for a myriad of all allergens. 2. Plan an allergy free Halloween party for your kids and their friends who must eat allergen free also. Parties like this allow kids to feel as normal as the next kid on holidays that surround foods. 3. If you plan on trick-or-treating anyway, have a plan to supervise snacking on treats only when you arrive back home where you can safely go through the candy trove before tearing into it. Parents can bring safe treats with them to delay the temptation of sneaking in an unsafe treat.<br />

4. If you have to go to a non-allergy friendly party, say with a family member, bring a little treat bag with treats that mimic the treats provided. (example: a mini allergen free pizza, allergen free cupcakes, a treat bag made with safe treats for them to take home)<br />

You know the reason I don't despise people trying gluten-free, or allergen free foods without a diagnosis?<br />
Because getting a diagnosis, accepting it, and getting treatment can sometimes be more than a person can handle. I have met so many people across the United States and abroad who are trying to figure out what is wrong with them physically. They come to our shows seeking answers, needing to talk to someone who doesn't think they are crazy.<br />
<br />
Sure, it would be better for them to get a diagnosis if at all possible. It would be fantastic if you can afford to get appointments with a health professional or not be sent running in the wrong direction by someone who doesn't clue in to what is wrong. Perhaps we forget that we still have many people who become bankrupted with just one health crisis. Just some food for thought...<br />

So how does the death of Glenn Frey play into this conversation?<br />
The death of the legendary Eagles front man was a sad day for so many people who appreciated him for the fantastic songwriter he was. As a music lover, I found myself moping about it all week. Then, the details of his untimely death started coming to light, and I was even more sad for so many other reasons than just losing one of the greatest rock and roll legends of my lifetime.<br />
<br />
Glenn died of Rheumatoid Arthritis, Ulcerative Colitis, and Pneumonia. More to the point, <a href="http://www.thewrap.com/glenn-freys-medication-played-a-part-in-his-death-manager-says/" target="_blank">the medications he was taking for RA had given him such a case of Ulcerative Colitis</a> that he had to undergo surgery in November and succumbed to Pneumonia in the end.<br />
<br />
We have lost far too many humans to auto-immune diseases already. A celebrity dying from an illness doesn't change anything about the situation, but it does make people stop and think about the implications of ignoring it. It also makes it a prime time for education to be accepted by a more receptive audience. A death takes away the sting of those celebrities just trying the latest fad thing out there, if even ever so slightly. Who are we to know what health issues they are privately dealing with?<br />
<br />
One of my friends posted the article on Glenn's death, and she pointed out the sad fact that most auto-immune drugs have remained more lethal than the diseases themselves. And <a href="http://www.webmd.com/rheumatoid-arthritis/guide/rheumatoid-arthritis-medications" target="_blank">Rheumatoid Arthritis</a> is just one of the auto-immune diseases that have drugs that have lethal side effects.<br />

Granted, sometimes it is necessary to take medications. But, with all of the side effects present with medications, it only stands to reason that millions of people are trying natural remedies and/or dietary changes. They are seeking answers to their health issues to relieve them without poisoning their body to treat symptoms. You were there at one time too, seeking out solutions for your health failing. You probably continue to try different methods to improve daily.<br />
<br />
At least 50% or more of the people who are new at trying a gluten-free or allergen-free lifestyle at <a href="http://gfafwellnessevent.com/" target="_blank">Gluten and Allergen Free Wellness Events</a>, claim that they are indeed searching for answers to a multitude of auto-immune problems which physicians have not been able to successfully treat or they had a health professional suggest it to them. The rest who attend claim multiple benefits because of dietary change, and many agree it saved their lives.<br />
<br />
The things we do all know are that we are not alone in seeking what is right for our bodies, and we should support medical professionals who are busily seeking more answers to help us. With all of that said, maybe we should all take it a little easier on people and their choices. Use the moments when you want to cringe to take the opportunity to educate. I'll be right there with you.<br />

It's a new allergen free year, and I hope you all are having a wonderful start to 2016.<br />
The 2015 year provided our communities with considerable good and bad news which is laid out before you below.<br />

The Good News:<br />

<li>The FDA is slowly<a href="http://www.fda.gov/Food/GuidanceRegulation/GuidanceDocumentsRegulatoryInformation/Allergens/ucm472735.htm" target="_blank"> amending the gluten free and allergen labeling</a> law to try and cover a loophole or two.</li>
<li>Food Allergy safety <a href="http://us7.campaign-archive1.com/?u=6c2a0eec8c5329268f59d7b79&id=addc66eef5" target="_blank">in school and airlines</a> is being spotlighted and a campaign is focused.</li>
<li>More studies on<a href="http://us7.campaign-archive1.com/?u=6c2a0eec8c5329268f59d7b79&id=df6e3578fc" target="_blank"> diagnosis, treatment, and public issues</a> are being delved into with fervor.</li>
<li><a href="http://www.grubstreet.com/2015/12/gluten-scientific-breakthrough.html" target="_blank">Gluten sensitivity</a> is being backed up and hopefully makes more strides sooner rather than later.</li>

<li>The media is bent on<a href="http://www.high50.com/health/five-reasons-not-to-stop-eating-gluten" target="_blank"> making your gluten and allergen free diet </a>to remain <a href="http://www.bustle.com/articles/123367-i-stopped-eating-gluten-for-a-month-heres-what-happened" target="_blank">ridiculed</a> and <a href="http://www.mysanantonio.com/opinion/commentary/article/Gluten-free-just-the-latest-useless-fad-6724252.php" target="_blank">questioned</a> on a daily basis with ever <a href="http://qz.com/569410/the-gluten-free-craze-is-making-celiacs-like-me-sick/" target="_blank">more candor</a>. With every negative blog post and news article, the chances of our safe options are being diminished.</li>
<li>People are 10 times more likely to be <a href="http://www.sheknows.com/parenting/articles/1100911/kids-food-allergies" target="_blank">vile in comments</a> on blog posts and media articles.</li>
<li>Companies like <a href="http://www.celiac.com/articles/24186/1/General-Mills-Sued-for-False-Advertising-Over-Cheerios-Protein-Claims/Page1.html" target="_blank">General Mills</a> and Quaker Oats are able to use their own internal testing methods which have been proven to have flaws.</li>
<li>Whether or not you agree with the P.F. Chang Asian Bistro lawsuit being waged, their legal team has chosen to use fairly offensive reasoning for fighting the lawsuit. These reasons are making fodder of the fact that<a href="http://www.celiac.com/articles/24210/1/PF-Changs-Pesky-Gluten-free-Disability-Lawsuit-Wont-Go-Away-Just-Yet/Page1.html" target="_blank"> celiac disease is a disability and that it is genetic</a>.</li>
<li>Talk show hosts, advertisements, comedians and cartoonists are still taking potshots at gluten free or people with food allergies, and failing to be funny to the ever growing community.</li>

Reading the lists above makes me only realize that we thought we had crossed the mountain of food allergies but still have so very far to go. Perhaps being a food allergy advocate should be more likened to hiking the Appalachian trail with hundreds of miles of mountains to traverse. We are likely only a quarter of the way there, or perhaps a third if you want to be a glass half full kind of person. Either way, we are getting there with every tedious step along the trail.<br />

This anxiety is due to family reunions and pot luck dinners with questionable preparation and ingredients. We used to be right there among those with anxieties, until just a couple years ago when we moved to the mountains of North Carolina.<br />
<br />
For 4 years after Doodle's diagnosis, I prepared and carted a separate meal to each of our Holiday get-togethers. It was doable with a lot of planning and extra work. When we made the move, it finally gave me the chance to use distance as an excuse to not have to pack up a full meal. Understanding the meaning of having a Holiday meal without stress and worry of cross contamination is truly wonderful.<br />
<br />
The move also allowed for me to focus on not only eating gluten-free, but eating organic and clean. No longer did I have to worry if the turkey that was chosen was a mass produced fattened up bird or the cranberry sauce was out of a can. No longer did I have to upset anyone with my annoying requirements of eating closer to the vine and making things homemade, as well as with dietary restrictions. And now, I could surround myself and my daughter with people on the same mission who appreciated real food.<br />
<br />
I got to know a butcher who could provide me with a pasture raised turkey at <a href="http://www.rosemountainbutchershoppe.com/" target="_blank">Rose Mountain Butcher Shoppe in West Jefferson</a>. We now buy all of our meats, eggs, and some local produce there. I picked up some homemade canned organic cranberry sauce at my best friend's farm. While in Connecticut doing our event in October, we purchased our favorite Stuffing Mix from <a href="http://www.aleias.com/" target="_blank">Aleia's Gluten Free Foods</a>. So with a little planning, our cleaner meal has formed without the usual last minute stress.<br />

<b><u>Southern Gluten-Free Cornbread Dressing</u></b><br />

1 Medium pan of gluten free cornbread (not sweet) crumbled<br />
<br />
1 box of gluten free stuffing mix from <a href="http://www.aleias.com/" target="_blank">Aleia's</a><br />
<br />
Toss together<br />
<br />
Add 1 Tsp. of poultry seasoning and 1 Tbsp. of sage, salt & pepper<br />
<br />
(Once completely mixed, taste and adjust seasoning to your liking)<br />
<br />
4 Stalks of celery chopped<br />
<br />
1 large onion chopped<br />
<br />
<br />
Saute celery and onion in 1 Tbsp. of butter or oil and add to bread mixture<br />
<br />
Add gluten free Chicken Broth to make a very wet mixture. (Depending on the amount of bread crumbs – You will need 3-4 cans of chicken broth or 1 large carton)<br />
<br />
Preheat oven to 350 degrees<br />
<br />
Melt 1 stick of butter in a casserole dish.<br />
<br />
Add stuffing mixture on top of melted butter<br />
<br />
Bake for 1 hour.<br />

<b><u>Holiday Gluten-Free Pie Crust</u></b><br />
<br />
(Good for sweet potato and pumpkin pies)<br />
<br />
<br />
2 1/2 cups ground pecans in food processor<br />
<br />
1/4 teaspoon ground cinnamon<br />
<br />
1/3 cup brown sugar<br />
<br />
4 tablespoons unsalted butter, melted<br />
<br />
<br />
Stir together ground nuts, cinnamon, and sugar. Mix in melted butter.<br />
<br />
Press the mixture into the bottom and up the sides of a 9 inch, deep-dish style, pie pan. Chill the unbaked crust in the refrigerator for about 30 to 45 minutes.<br />
Fill with your pumpkin pie or sweet potato pie mixture and bake.<br />
<br />
If pre-baking nut crust for a custard pie (like key lime or lemon):<br />
<br />
Place pie crust on a cookie sheet, and position on the middle rack of a preheated 350 degree F (175 degree C) oven.<br />
<br />
Bake for 12 to 15 minutes, or until lightly browned. WATCH it carefully, as nut crusts burn easily; they DON'T have to turn black to taste burnt!<br />
<br />
Cool completely before filling.<br />
<br />
You may use almonds to make this crust as well. You can also add about 1/2 cup of gluten free flour such as rice flour to the nut mix if you are making a potato or pumpkin pie for a more flour like texture<br />
<br />

<b><u>Sweet Potato Souffle</u></b><br />
<br />
4 medium sweet potatoes<br />
<br />
1 teaspoon pure vanilla extract<br />
<br />
1 cup of raw sugar<br />
<br />
2 eggs<br />
<br />
1/2 cup of condensed milk<br />
<br />
1/2 cup of fresh butter<br />
<br />
1 teaspoon cinnamon<br />
<br />
<br />
<u>Topping</u><br />
<br />
1 cup brown sugar<br />
<br />
1 cup of chopped pecans<br />
<br />
1/2 cup of fresh butter<br />
<br />
1/4 cup gluten free all purpose flour<br />
<br />
1/2 tsp of baking powder<br />
<br />
Boil potatoes with skin on until tender. Peel and mash. Add sugar, cinnamon, 1/2 cup butter and milk. Beat eggs well and add to mixture. Add vanilla. Pour into buttered 8x8' Pyrex dish.<br />
<br />
Mix up topping and spread mixture over top. Bake at 350 for 30 - 45 minutes.<br />
<br />
Some people use marshmallows on top instead of topping in which case you add them when the souffle is almost done and brown the marshmallows slightly on top.<br />
